Do not freeze risotto, this changes the structure and that is exactly what is important with a risotto. The leftovers that you keep in the fridge can be warmed up the next day by adding a little more stock. You can also opt for wine or if you have nothing left at home:boiling water.
Keep stirring until the risotto is heated through. Taste the structure of the risotto every now and then, it is not always right.
To be fair, the risotto won't make it warmed up on the first day. You can also make risotto balls from your leftover risotto (arancini), for example according to a recipe from Uit Pauline's kitchen.
