How does a slow cooker work and what times should I use?

When I first had the slow cooker on my counter, that was indeed my question. How exactly does a slow cooker work? The answer to that is not difficult at all, but you still have to learn how to cook with a slow cooker. Learning to cook is mainly about the time that certain dishes need in the slow cooker and when you set a slow cooker on high and when on low. I'm going to give you some more information on that, all from my own experiences with the slow cooker.

If you are going to cook with a slow cooker, you are going to stew your food in an electric pan. In principle, you can do everything in the slow cooker. The slow cooker does its job. What can be put in the slow cooker and for how long?

General tips on how to cook meat, fish, poultry and vegetables in the slow cooker can be found below. The times it takes your slow cooker to do it differ. Not only with the type of food you prepare in the slow cooker, but the devices can also differ somewhat. The preparation times below are therefore a guideline.

Meat in the slow cooker

The slow cooker is ideal for stewing meat. The longer you leave the meat on a low setting, the more tender the meat will be. The amount of fat in the meat also plays a role in this. The fat in the meat ensures tender meat from the slow cooker. The longer you stew the meat at a low temperature, the more tender it becomes.

How does a slow cooker work with meat? Different types of meat have their own cooking time.

  • Pork (such as roulade for example):6 hours on low
  • Beef such as hash, beef steaks, escalopes:8-10 hours on low
  • Shoulder chop 6 hours on low
  • Slow cooker ribs:8 hours on low
  • Pork tenderloin:is possible (± 5 hours on low ), but tastier from the pan/oven
  • Spare ribs from the slow cooker:5 hours on high
  • Lamb:8 hours on low

Tips for meat in the slow cooker

Keep the following tips in mind when preparing meat in the slow cooker:

  • Frying the meat beforehand (sautéing) gives a nice color and the meat tastes even better. But it is not necessary. Some slow cookers can do this by default, others can't.
  • Add a little acid to your dish (a little vinegar or lemon juice), this will make your meat more tender.

The slow cooker I also have is an absolute top. The inner pan is removable and you can use it on your stove beforehand, for example to fry for a while.

Vegetables in the slow cooker

Only vegetables in the slow cooker is actually not really the intention. Not all veggies get better after spending hours in the slow cooker. For example, I've put beans in the slow cooker myself (along with chicken), but that didn't work for me. I prefer to put the chicken in the slow cooker alone and the beans separately in the steam oven, for example.

How does a slow cooker work with vegetables?

  • Vegetables such as onion, leek, carrots, bell pepper, tomato, eggplant, zucchini, fennel and the like come into their own in combination with meat and chicken.
  • It is best to cut hard vegetables into smaller pieces, so they cook better (for example, carrots and potatoes).
  • Do you want to keep the vitamins of the vegetables? Blanch them shortly before putting them in the slow cooker. This is how you kill the enzymes so that vitamins are preserved in the slow cooking preoces.
  • It is better not to put raw beans in the slow cooker. Beans contain a substance that is poisonous to humans if these beans are not cooked. You don't get to boiling point in a slow cooker. It is therefore best to use pre-cooked beans.

Poultry in the slow cooker

How does a slow cooker work with, for example, chicken? Not the same as with meat, I can tell you that. If you put the chicken in the slow cooker for 8 hours, it will become very dry. Chicken is simply cooked much faster than beef or pork.

  • Chicken fillet in the slow cooker:4-5 hours on low

  • Whole chicken in slow cooker:8 hours on low

Fish in the slow cooker

  • Shrimp in the slow cooker:30 minutes – 1 hour on low
  • White fish in slow cooker:3-4 hours on low
