Behind this little cake, which Carrie Bradshaw loves, actually hides an Anglo-Saxon specialty from the 1950s, somewhat forgotten before its sensational comeback in recent years. A kind of sponge cake (formerly baked in a cup – like mugcake), covered with a pretty colored icing. Concretely, therefore, nothing rocket science to achieve. Especially since the cupcake allows all variations and fantasies (not to mention the sex-toy cupcake!).
Prepare a cake batter following the traditional recipe:125g butter, 250g sugar, 200g flour, baking powder and 2 eggs. Otherwise use your recipe for yogurt cake, sponge cake, or chocolate cake. The main thing is to bake the dough in paper cases, and take into account that the icing that will cover them will be rich. So avoid bases that are too heavy, too dense:exit pound cake and chocolate fondant! Have fun flavoring the cake with aromas that will then harmonize with the flavors and colors provided on the top of the cupcake.
This is the defining (and girly) element of the cupcake! Traditionally, an icing is prepared consisting of 100 g of soft butter and 200 g of icing sugar, with coloring added, which is piped. However, fantasies are also allowed here:frost your creations with cream cheese frosting (like carrot cake), with whipped ganache, with Italian meringue (to brown with a blowtorch or under the broiler), with the whipped cream, real or fake... Finally, to finish, don't forget to stuff these creamy swirls with small decorations:slivered almonds, candies, sugar pearls, marzipan or sugar paste figurines...
