Chicken maffé is a typical recipe throughout Africa. To prepare it, brown 4 free range chicken thighs in a little oil for 10 minutes then set aside. Replace them with 1 chopped onion. Add 1 tablespoon of tomato puree, 1 teaspoon of powdered sugar and 1 pinch of cayenne pepper. Add salt and pepper. Then add 4 tablespoons of peanut butter and the chicken. Pour water halfway up and cook for about 35 minutes. Serve hot with rice or sweet potatoes.
Okra is one of the key vegetables in African cuisine. For example, it can be eaten in a stew. To do this, melt in a little oil 1 chopped onion, diced red pepper and green pepper, 3 diced tomatoes, 1 minced garlic clove, salt and pepper. Let cook for 20 minutes. Add 400 g of okra previously blanched for 5 minutes in salted boiling water. Let warm for 5 minutes and serve with chicken or fish.
Menenaths are little Egyptian cakes stuffed with dates. Real treats for dessert! First prepare the dough by mixing 1 kg of flour with 500 g of butter, 3 tablespoons of caster sugar, 3 sachets of vanilla sugar, 2 sachets of baking powder and 1 tablespoon of sunflower oil. Work the dough with your fingertips until you get a smooth dough. Then chill the dough. Then prepare the stuffing by mixing 1 kg of chopped dates with 2 sachets of vanilla sugar and 75 g of butter. Divide the dough into small balls. Add a small ball of date stuffing to each and flatten to form a small pancake. Bake for about 10 minutes.
