Lamb carré or lamb chops, are the most delicious pieces of lamb meat. This recipe of lamb square with green asparagus is nice and light for spring.
Ingredients for 4 people:
2 pieces of lamb square
9 mini corn
About 18 green asparagus
Teriyaki sauce
Salt/pepper
Beet leaves
Preparation:
Boil the mini corn for 4 minutes and rinse immediately in cold water.
While the corn is cooking, remove the fat from the lamb square and cut into portions with 2 bones each. Cut the mini corn lengthwise.
Grill the lamb square over high heat until crispy, soak in a little teriyaki sauce and place on indirect heat until you reach the desired degree of roasting.
Grill asparagus quickly high heat.
Serve the lamb square, green asparagus and mini corn on a plate, sprinkle with salt and pepper and some beet leaves.
