Preparation
In a bain-marie, mix the yolks and beat while adding the powdered sugar, until the mixture whitens. Add the flour, ground almonds and cocoa, then gently fold in the whipped egg whites.
Cover the baking sheet with buttered parchment paper. Spread the dough on it and bake for 6 minutes in a preheated oven. 6 (180°C). Remove from the oven, turn the dough over on a clean damp cloth, and peel off the parchment paper. Then roll the biscuit in the damp cloth and leave to cool.
For the chocolate mousse, melt the chocolate in a bain-marie. Off the heat, add the butter and cream, mix. In a bowl, beat the yolks with the sugar. Stir them into the chocolate mixture. Add the egg whites.
Unroll the cookie. Spread the chocolate mousse, leaving 2 cm without mousse on the edges. Roll the biscuit, cover it with the rest of the mousse so that it looks like a real log, cut off the ends so that the log has a clean cut.
For the decoration, mix the icing sugar and the softened butter. Cover each end of the log with this mixture. Place in the refrigerator for at least 3 hours. Here you have a traditional chocolate Yule log!
