Fortunately, transforming a classic oven into a pizza oven is possible!

- 1 pizza (with homemade pizza dough)
- 1 oven
- 8 tiles of 20 cm of unglazed ceramic tiles.
1. Arrange 4 ceramic plates on a first rack in the cold oven.
2. Put 4 more on a second grid, about fifteen cm above.
3. Heat the oven to maximum temperature for 45 min.
4. Flour the bottom plates.
5. Slide your pizza in.
6. Cook for 5 to 7 min.
7. Enjoy.
There you go, your pizza is perfectly cooked, with a very crispy dough, just like at the pizzeria :-)
With this cooking at the right temperature, I guarantee my pizza an ideal and balanced crispness between the top and the bottom.
Why do our homemade pizzas always lack a little something?
As good as the sauce is, the homemade pizzas never have the crispness of those from the pizzeria down the street! The crust is never perfect.
The main difference between a lambda oven and that of the pizza maker is that the latter can reach much higher temperatures (around 1000°C).
Home cooking in a conventional oven will therefore never come close to them, unless... if we use this trick!
