For those looking for a good, delicious and economical meal to prepare for the holidays , Santa Claus and I wholeheartedly recommend the white bean soup. Explanations in the following.
Christmas meals are often very expensive. Too expensive for many. It's normal, they are made up of refined and therefore overpriced ingredients, such as logs, salmon, turkey...
Well I know a dish just as delicious but half the price:white bean soup!
It's simple, a can of white beans, it barely costs 1€ and, prepared as a soup, it can last two days without losing its taste. If you want to wow your guests, you can add a few simple ingredients that will cost you less than 2.50€ in all and for all.
Here is my recipe for 4 people
- 750g white beans
- 2 onions
- 3 cloves of garlic
- 1 white leek
- 60g of butter
- 6 slices of toasted bread
- 1 bouquet garni
Very simple, inexpensive ingredients that keep for a long time . The top of the top. Now here's how I prepare my delicious bean soup:
1. I split the leek white , then I peel the garlic and the onion, which I chop into not too fine pieces.
2. I melt the butter in a pot. Then I throw in the onion, garlic and white leek. I let it cook for 5 minutes over low heat, then I add the beans, the bouquet garni and 2 liters of water. I let it cook for about an hour and a half. I take this opportunity to go and wrap my Christmas presents.
3. When it's cooked, I remove the bouquet garni and I take the equivalent of a bowl of beans that I keep warm for garnish.
4. I pass the soup through the vegetable mill or in the blender, I pepper and it's ready!

As I said above, this recipe does not cost more than 2.50 euros for 4 people and it is an excellent dietary hot dish for Christmas or for the harsh winter evenings.
I don't know why Christmas meals are always overpriced (about 100 euros, not everyone can afford it), but you can avoid breaking the bank with cheap ingredients that are just as delicious as the usual Christmas dishes.
