Anyone who has ever eaten fresh pineapple probably knows the weird feeling that pineapple sometimes causes on your tongue and palate. Why is that?
The stinging sensation is caused by bromelain, enzymes that digest protein. The substance can irritate the sensitive skin in and around the mouth. The enzymes break down proteins in your mouth and attack your tongue, cheeks and palate, as it were. Fortunately, the proteins in your mouth rebuild quickly. When you swallow the pineapple, your saliva and stomach acid ensure that the enzymes in the pineapple are broken down.
