One oyster is not the other. There are different origins, shapes and tastes. Despite the differences, there are also similarities, so you can perfectly match your wine to your oysters.
Wine with raw oysters
Raw oysters are soft to the touch and have a salty taste. That goes well with a dry and fresh wine. Preferably slightly fruity with a mineral taste. For example, choose the dry Crémant d'Alsace. For a slightly more refined and exciting combination, you can opt for Riesling d'Alsace. This complements the taste of an aperitif with oysters.
Wine with warm oysters
When you steam, au gratin or smoke oysters, the oyster meat becomes firmer. The pronounced salty taste disappears. Which wine you choose with warm oysters depends on the additions to your prepared oysters.
A good combination with oysters au gratin with guryère sauce is ripe Riesling d'Alsace. A dry Muscat and Gewurztraminer d'Alsace go with curry soup with oysters, and a dry Pinot Gris d'Alsace with stir-fried oysters with spring onions and coriander. A dish that always scores:steak in a smoked oyster sauce. A great combination with Pinot Noir d'Alsace with a little wood aging.
