The third Thursday in June is World Tapas Day. That includes these delicious grilled oysters with chorizo butter.

Preheat the oven grill. Peel and chop the onion. Peel and finely chop the garlic. Chop the sausage into fine pieces. Melt half of the butter in a small saucepan. Saute the onion for 3 minutes until translucent. Add the garlic and cook for a further 3 minutes. Stir in the chorizo and fry the sausage until crispy. Set aside. Hold each oyster with a kitchen towel and carefully open the shell with an oyster knife. Remove the top shell. Cut the oyster loose and remove any shell grit. Place the oysters on a baking tray. Spoon a teaspoon of the chorizo mixture onto each oyster and top with a flake of butter. Slide the baking tray under the hot grill and roast the oysters for 3-5 minutes until brown and cooked through. Serve with lemon wedges.
