Have you ever had a bread salad? This halloumi bread salad is a real treat.
Starter for 4 people
Preparation time 45 minutes + 30 minutes waiting time
Ingredients
• 200 g flour + extra for dusting
• 1 tbsp sunflower oil
• 40 g grated halloumi
• 4 spring onions
• 2 sprigs mint
• 1 garlic clove
• 4 tbsp lime juice
• 4 tbsp olive oil
• 1 pinch brown sugar
• 2 limes
• oil
• 8 kaffir lime leaves
• 75 g arugula

Get started
Sieve the flour with 1 tsp salt. Make a mound of the flour on the work surface and make a well in it. Pour 150 ml of lukewarm water into the well, mix the dough gently with the water and knead it into a smooth dough. Knead in the oil and the halloumi and form the dough into a ball. Let the dough rest covered in a warm place for 30 minutes.
Divide the dough into eight pieces and roll out each piece thinly on a floured work surface. Bake the flat halloumi breads in a hot non-stick frying pan for 1-2 minutes per side until crisp. Let them cool.
Scrub the limes with cold water and wipe them dry. Cut the limes in half and brush the cut surface with oil. Heat a grill pan, place the lemon halves in it and roast them until nice brown stripes are on the cut surface. Also roast the lime leaves briefly until they turn light. Cut the spring onion into rings. Finely chop the mint leaves. Peel and chop the garlic. Mix a dressing of the lime juice, oil, caster sugar, salt and pepper. Mix with the garlic, mint and spring onion. Wash and dry the arugula, coarsely tear the leaves.
Break the sandwiches into pieces and arrange them on the plates with the toasted lime, lime leaves and arugula. Drizzle over the spicy garlic dressing.
