Quinoa salad with spinach and tofu recipe

Would you like something different with quinoa, or do you actually have no idea what you can do with quinoa? Try this quinoa salad from Healthy Delicious.

Ingredients
– Quinoa (50 grams per person)
– Tofu (50 grams per person)
– Spinach (100 grams per person)
– Red onion
– Walnuts or mixed unsalted nuts
– Red pepper
– Dried apricots
– Mango, pineapple, apple or melon (sweet fruit of your choice and taste)
– Mint and/or chives
– Cinnamon
– Coconut oil

For the dressing
– Lime
– Feta
– Full-fat yogurt
– Olive oil
– Balsamic vinegar

Preparation method Boil the quinoa in plenty of water for 8 minutes. Drain the quinoa, rinse with cold water and scoop into a bowl. Drain the tofu and cut into slices. Sprinkle the tofu with cinnamon and fry in a frying pan with coconut oil.

Meanwhile, finely chop the spinach, red onion, bell pepper, fruit and mint and place in the bowl. Add the nuts, feta and juice of a lime. Garnish the salad with olive oil, balsamic vinegar and a splash of yogurt.
