Have you exercised and are you looking for a vegetarian salad as a post workout meal? Then this salad with tofu and kiwi is delicious to try.
Ingredients (for 4 servings)
– 4 green Zespri kiwis
– 125 grams tofu
– 1 teaspoon ground cumin
– ½ teaspoon salt
– 2 cloves garlic (pressed)
– 2 tablespoons olive oil
– 8 black olives (pitted)
– 1 cup toasted croutons
For the dressing
– 1 tablespoon cider vinegar
– 1 tablespoon olive oil
Preparation method
Let the tofu drain on kitchen paper and cut into 2 centimeter cubes. Sprinkle the cumin, salt and crushed garlic over the tofu. Add the olive oil and mix all ingredients. Then fry the marinated tofu in a frying pan until it is nicely browned. Then let it drain and cool (you can do this on a piece of kitchen paper). Peel the kiwis and cut them into cubes, then put them in a bowl. Add the tofu, olives and croutons. Mix the olive oil with cider vinegar and drizzle the dressing over the salad. Serve with a toasted bread roll if desired. Not a fan of tofu? You can replace it with feta.
