The lentil sausage recipe, my butcher gave it to me advised.
Inexpensive, it is also easy and quick to prepare.
Delicious and friendly, the whole family and friends are bound to love it.
- 4 Montbéliard sausages
- 200 g of bacon
- 500g green lentils
- 1 onion
- salt and pepper
1. After washing the lentils, I put them in a Dutch oven with three times their volume of cold water. I let it simmer on low for ½ hour.
2. I salt very lightly and pepper.
3. I immerse the sausages in a large volume of simmering water and let them cook for 20 minutes.
4. I peel and thinly slice the onions and brown them with the bacon bits in a pan.
5. Once the lentils are ready, I drain them and collect the cooking water, then I put them in my pot with the sausages, my bacon bits and the onions. I moisten everything with a little cooking broth.
6. I cover my Dutch oven and let it simmer for 30 minutes!
There you go, your lentil sausage dish is ready :-)

Above all, do not prick your sausages, as they may lose their smoky taste in the cooking water… Likewise, do not over-salt your dish, as the bacon bits may do it for you!
- 4 Montbéliard sausages:500 g at €9.64 per kilo, i.e. €4.82
- 500 g of green lentils:€1.64 per kilo, i.e. €0.82
- 200 g of bacon bits:€6.20 per kilo, i.e. €1.24
- 1 onion:around 125 g at €1.85 per kilo, i.e. €0.23
That is a total cost of €1.78 per person or €7.11 for 4 people.
Believe me, with this recipe, you can skip the starter!
