Barbecue without meat? There are plenty of plant-based options that are tasty and easy. How about baked sweet potato?
For the tofu
For the caramelized pecans
1. Squeeze the liquid out of the tofu by wrapping it in a tea towel and placing something heavy on it.
2. Add the tofu with the remaining ingredients to a food processor and puree until smooth.
3. Shape the tofu mixture into a stick and wrap in plastic wrap. Put it in the fridge for at least an hour.
4. Preheat the oven to 175 degrees. When the tofu has stiffened, remove the plastic wrap and bake in the oven for 20 minutes. Turn halfway through.
5. Poke some holes in the sweet potatoes and wrap them in aluminum foil. Roast the sweet potatoes between the coals until soft to the touch. The time depends on the size of the sweet potato.
6. Meanwhile, make the caramelized pecans by heating the olive oil with the agave syrup in a frying pan. Add the pecans and a pinch of salt and cook for five minutes. Let it cool down.
7. Cut open the baked sweet potato, crumble some of the fried tofu over it and serve with the caramelized pecans.
