Preheat the oven to th.6 (180°C).
Wash the apples thoroughly and cut a 1 cm thick hat on top. Empty them two-thirds with a small spoon. Peel the sweet potatoes and onions. Cut the potatoes and bell pepper into small dice. Slice the onions into thin rings.
Heat the oil in a sauté pan and sauté the vegetables and raisins until the sweet potatoes are a little coloured. Add salt and pepper. Fill the apples with this mixture. Place them in a baking dish.
Bake for 30 to 35 minutes. Take the apples out of the oven and serve immediately.
