Preheat the oven to 200°C (th-6-7).
Rinse the potatoes under cold water. Cut them lengthwise about 2/3. Wash the herbs.
Place a piece of bacon and 1 bay leaf or 1 sprig of rosemary in each potato.
Line up the potatoes on the oven tray, drizzle with olive oil, salt and pepper from the mill.
Bake for around 20 minutes.
Serve hot.
