Potato and crab pancakes


Ingredients:8 pieces
  • potatoes
    100g
  • crab meat (or tin)
    80 g
  • flour
    120 g
  • eggs
    3 (2 whole + 1 yolk)
  • cream
    100g
  • Greek yogurt
    50 g
  • butter
    30g
  • salt freshly ground pepper

Peel the potatoes and put them in plenty of cold water. Bake them for 20 minutes. Salt to a boil.

Drain the potatoes and mash them with a fork or potato masher. Leave to cool.

Beat the whole eggs, the yolk and the fresh cream together, add the Greek yoghurt and the crab meat, salt and pepper, incorporate this mixture into the mash.

Heat a little butter in a non-stick pan, add a small ladle (about 2 tablespoons) of pan-cake mix and cook for about 2 minutes on each side.

Decorate the pan-cakes with a few pieces of crab.

You can also make smaller patties to serve as an appetizer.
