Peel the pears, cut them in half, remove the cores and seeds. cut each pear half into thirds. macerate them for 1 hour in the orange juice.
In a bowl, mix 2 yolks and 1 whole egg with the powdered sugar, then add the cocoa, ground almonds and liquid cream.
Preheat the oven to th. 7 (210°C).
Roll out the dough and line a buttered pie pan. Arrange the well-drained pear quarters on the pastry base. Bake for 10 minutes.
At the end of this time, take the pie out of the oven and pour the cocoa mixture over the pears. Bake again for 30 minutes. If the surface of the pie browns too quickly, protect it with a sheet of lightly buttered aluminum foil.
Leave to stand for 55 minutes in the oven off, unmold and enjoy warm or cold.
