Sweet potato is always good. Try this baked and stuffed variant.
For 2-3 people
1. Preheat the oven to 225°C.
2. Cut the washed and dried sweet potatoes in half lengthwise. Place them on a baking tray, cut side up. Brush with oil and season with salt and pepper. Bake the sweet potatoes for about 40 minutes, or until they are soft.
3. Meanwhile, prepare the toppings. Cut the Pulled Oats into smaller pieces. Mix this with crème frache, finely chopped sun-dried tomatoes and herbs. Put the mixture in the fridge for a while.
4. Spoon a generous spoonful of filling onto the sweet potatoes once they are done. Enjoy!
