With this pokebowl with sweet potatoes we dive into Hawaiian cuisine. Did you know that sweet potato is a good source of vitamin C? That's a nice bonus!
Ingredients
For 4 people
- 1 package CelaVita Sweet potato casserole thyme &garlic
- 250 g sushi rice
- 80 ml rice vinegar
- 200 g edamame beans
- 1/2 bunch radish, sliced
- 150 g beetroot, julienne
- 200 g mango, cubed
- 2 ripe avocados, in wedges
- 4 tsp sesame seeds
- 1/2 nori sheet, cut into strips
- 4 tbsp sriracha mayonnaise

Preparation method
- Prepare the sweet potato casserole according to the instructions on the package.
- Prepare the sushi rice according to the instructions on the package. Stir the rice vinegar into the cooked rice and let it cool down.
- Divide the rice among four bowls. Serve with the sweet potato, edamame beans, radish, beetroot, mango and avocado. Sprinkle with sesame seeds, strips of nori and sriracha mayonnaise.
