In December, many people have more dinners than average on the schedule. The question is, what are you preparing this time? Trout with almonds in combination with a good wine is a delicious option.
Ingredients
For 4 people (preparation 15 minutes)
4 trout
salt, pepper
4 tablespoons flour
50 grams butter
2 tablespoons oil
70 grams slivered almonds
lemon juice
1 tablespoon finely chopped parsley
How to prepare it
Rub the trout with salt and pepper and roll them in the flour. Heat the oil and 20 grams of butter in a non-stick pan. Fry them on medium heat for 8 to 10 minutes on both sides until golden brown. In the meantime, toast the almonds until light brown in a dry frying pan.
Place the trout on a platter. Wipe the non-stick pan clean with kitchen paper and melt the rest (30 grams) of the butter in it. Stir in lemon juice, parsley and toasted almonds. Season with salt and pepper. Pour the almond gravy over the trout.

Classic is the combination of trout with a rich Riesling d'Alsace. Have a Grand Cru Riesling for this festive meal.
