Sweet potato soup recipe with basil and bell pepper
I received some very nice comments on my Facebook page for the sweet potatoes from the slow cooker. One of those reactions was from Erna, who regularly makes sweet potato soup according to Linda de Vries Jansen's recipe. And then I get curious, of course. Linda was willing to share her delicious sweet potato soup recipe and I'll make you happy with that. I made the sweet potato soup myself in the slow cooker, but this recipe also describes the preparation in the pan.

Recipe Sweet potato soup with basil and paprika
Like all our other soup recipes, this recipe is also one to spoil your family!
Supplies for a big-pot of sweet potato soup:
2 pcs sweet potato, peeled and diced
1 tablespoons olive oil
2 onions, chopped
1 garlic clove, crushed
750 ml chicken or vegetable stock
2 pieces of red bell pepper in small pieces
1 teaspoon basil
possibly a red pepper (uses Erna, not Linda 😉 )

Preparation sweet potato soup in a pan
Heat a tablespoon of oil in a pan and fry the onion, bell pepper and garlic until soft
Add the sweet potato in pieces and then the stock
Bring to the boil and let it simmer for 15 minutes, or until the potato pieces are soft
Pure the soup fine and smooth with a stick blender
Add the basil last
Preparation sweet potato soup in slow cooker
Of course you can also make this sweet potato soup in the slow cooker. Put on in the morning and you don't have to worry about it all day, ideal.
Fry the onion, bell pepper and garlic gently in the slow cooker or a separate pan
Add the onion mixture to the slow cooker
Add broth and sweet potato pieces
Slow cooker on low for 6-7 hours or on high for 4 hours
Pure with a stick blender
If the soup is a bit too thick, you can dilute it with some extra stock
Add the basil
Enjoy your meal!
