Did you know that curry is an ideal vegetarian dish? This Indian yellow curry is richly filled with spicy sweet potato and has a delicious creamy taste.
Sweet potatoes are full of antioxidants compared to regular potatoes. Simple, fast and nutritious! And even though a potato sounds quite Dutch, this time we give it an Indian twist.

Ingredients
For 2 persons
- 1 pack of CelaVita Sweet potato casserole ras el hanout
- 1 tbsp yellow curry paste
- 1 tbsp oil
- 100 g rice
- 1 garlic clove, crushed
- 1 onion chopped
- 100 ml vegetable stock
- 100 ml coconut milk
- 2 hard-boiled eggs
- 7 g fresh coriander
- 1/2 lime
- 1 tsp sesame seed
Preparation method
- Prepare the sweet potato casseroles according to the instructions on the package.
- Prepare the rice according to the instructions on the package.
- Wake the curry paste and a tablespoon of oil over high heat. Add the garlic and onions and stir fry for a further 2 minutes.
- Add the coconut milk and the stock. Simmer for 5 minutes. Add the sweet potato and let it simmer for another 5 minutes.
- Serve the curry with rice, egg, fresh coriander, lime juice and possibly some sesame seeds.
