Food blogger Sandra Waterschoot-Koopmans was working as a freelancer and graphic designer when she launched Leukrecepten.nl in 2011 with her husband Eric. Sandra now works full-time as a food blogger and the first cookbook is a fact:Nice recipes – the cookbook.

Vegetarian snack, for 4 people
Preparation time 20 minutes | oven time 15 minutes
Ingredients :4 medium sweet potatoes • 2 tbsp sunflower oil • 1 bell pepper • 1 red onion • 5 tbsp canned corn • 100 g kidney beans • 1 spring onion • 125 ml sour cream • handful of grated cheese • guacamole, to serve • coriander or parsley , to garnish.
Extra needed:mandolin or cheese slicer
Preparation :preheat the oven to 200°C. Cut the (unpeeled, but washed) sweet potatoes into thin slices with a mandoline or cheese slicer. Place them on an oven rack and brush with a thin layer of oil. Bake for 10 minutes. You may have to repeat this 2 or 3 times as the slices will not all fit on the grid at once. Meanwhile, cut the bell pepper into cubes and chop the red onion. Drain the corn and beans well. Cut the spring onion into rings. Let the sweet potato slices cool for a few minutes. Preheat the oven to 220°C or turn on the grill. Place the sweet potato slices in a baking dish. Sprinkle with the bell pepper, red onion, beans, corn and spring onion. Spoon heaps of sour cream on top and then sprinkle with cheese. Gratin in the oven for 5 minutes. Serve the sweet potato nachos with guacamole and garnish with coriander or parsley if desired.
Main course, for 3 pieces
Preparation time 30 minutes
Iingredients :4 eggs • ½ cucumber • 4 veggie burgers • 4 hamburger buns • 100 g carrot, julienne • 100 g bean sprouts • 8 tbsp peanut sauce or satay sauce • fried onions, to garnish
Preparation :hard-boil the eggs for about 8 minutes. Slice the cucumber and eggs. Fry the veggie burgers in a pan in a little butter. Cut open the buns (toast them briefly if necessary). Top the sandwiches with the cucumber slices, a handful of carrot, the burger, egg slices, some bean sprouts and finally the peanut sauce. Sprinkle with some fried onions.
