Did you know that the sweet potato is not related to the regular potato, but that it is counted among the vegetables? Columnist Annemiek has a delicious recipe for a spicy sweet potato spread.
You need this
- 450 g sweet potato
- 1½ tsp chili powder
- 1 garlic clove
- 3 tbsp tahini
- juice of ½ lime
- 1 tsp maple syrup
- ½ tsp cinnamon
- 1 ½ tsp ground cumin
This is how you make it
- Preheat the oven to 200°C. Peel the sweet potatoes and cut them into pieces of about 2×2 centimeters.
- Place on a baking tray with baking paper, sprinkle with the chili powder, drizzle some olive oil over it and roast in the oven for 45 minutes.
- Let the potatoes cool down and puree them with the rest of the ingredients in a food processor (an immersion blender is also possible) until smooth. Add some olive oil or water if the spread is too thick. Taste and add some extra lime juice, salt or tahini to taste.
- Put the dip in a clean glass jar and keep it in the fridge. It will then remain good for at least a week.
- Tip:this spread is extra tasty after it has been in the fridge for a few hours.
