Santé's Annemiek is not so fond of ready-made sweet chili sauce full of refined sugar and 'other junk'. She much prefers to make it herself Super easy and so delicious!
You need this
For 1 jar or bottle
- 3 red peppers
- 2 garlic cloves
- 1 cm fresh ginger
- 3 tbsp honey
- 150 ml of water
- 50 ml apple cider vinegar
- 1 tsp fish sauce
- 2 tsp cornflour
- sunflower oil.
Additional needed :stick blender, preserving jar or bottle
This is how you make it
- Remove the stems and seeds from the peppers and keep the seeds of one pepper. Cut the peppers into pieces.
- Peel the ginger and peel the garlic, finely chop both.
- Heat the oil in a saucepan and fry the peppers, garlic and ginger for about
1 minute. Add the honey and keep stirring. When bubbles appear, add the water and vinegar. Let it simmer for 3-4 minutes, then turn off the heat.
- Mix the sauce with the immersion blender (leave some small pieces in it). Add the fish sauce and taste. If desired, add some honey or fish sauce to taste.
- Make a smooth paste of 2 teaspoons cornflour and some water in a glass. Pour into the chili sauce, turn the heat back on and let it simmer until the sauce has the desired thickness.
Hint
Do you want a mild chili sauce? Do not use the pepper seeds. Do you like extra spicy? Then add more seeds.
