Columnist Annemiek preferred to raise her children in a healthy way, with lots of fresh foods and preferably without refined sugars. Now that they are bigger, the latter becomes difficult. Fortunately, they are still very happy with this recipe from her 'strict' time:banana-peanut soft serve ice cream.
You need this for about 8 balls
- 4 bananas in pieces
- 4 tbsp peanut butter with nut pieces

This is how you make it
- Cut the bananas into pieces, put them in a container or bag and put them in the freezer for at least a day.
- Push the frozen bananas with the peanut butter in a food processor or blender until smooth, creamy. Please note, do not puree too long, because then it will melt.
- Make balls of the ice cream and divide between four ice cream trays. Garnish with banana slices, small pieces of dark chocolate, chopped dates and/or a teaspoon of peanut butter.
Hint
Is the motor of your food processor or blender not too strong? Then let the banana thaw for five minutes before you puree it.
