Making popsicles is hip! And there's no ice cream machine involved:you don't need more than a few popsicle molds. Do you make your ice creams with fruit? The riper the fruit, the less sugar you need. Here we have a recipe for a delicious tricolor ice cream with strawberry, banana and blueberry.

Preparation time:20 minutes, and 4 hours of freezing time

Ingredients

  • 125 grams of sugar
  • 250 grams of strawberries
  • 1 lemon
  • 100 ml sugar syrup
  • 200 grams of banana pulp
  • 2 tablespoons yogurt
  • 200 grams of blueberries or blueberries

Additionally needed: 8 (silicone) popsicle molds with sticks, blender or stick blender with high mixing cup

Preparation method

  • Put the sugar with 100 ml of water in a saucepan. Bring to the boil and simmer for 2 minutes until all the sugar has dissolved. Let the syrup cool completely.
  • Wash the strawberries and remove the crowns.
  • Squeeze the lemon.
  • Pure the strawberries with 1 tablespoon lemon juice and 50 ml sugar syrup in the blender.
  • Divide the strawberry puree between the molds and put them in the freezer for 30 minutes.
  • In the meantime, cut the bananas into pieces, puree them with the yogurt and 1 tablespoon of lemon juice.
  • Remove the molds from the freezer, insert the sticks and spoon in the banana mixture. Put another 30 minutes in the freezer.
  • Wash the berries and puree them with 1 tablespoon lemon juice and 50 ml sugar syrup. Rub the puree through a fine sieve and fill the popsicle molds with it.
  • Allow the ice creams to freeze completely in at least 3 hours.
  • Carefully remove the ice creams from the molds.
