The vegan stew recipe by Kirsten Bloemen from Geen Bladje Sla is another proof that as a vegan you don't have to miss anything. 'It was so delicious! I'm totally excited about this. My boyfriend was even happier than I was, because in his non-vegetarian period, stew was always his favorite sauce with the fries – satay sauce is my number 1 priority. It's so cool that this option is back!'
Cut the onions into half rings. Heat some olive oil in a frying pan, fry the onion and crush the garlic. Meanwhile, cut the chicken pieces a bit smaller and fry them with the onion and garlic until they are golden brown.
Deglaze with the wine and stock. Cut the gingerbread into slices and spread these slices with mustard. Place the slices on top of the sauce and press down slightly. Add a generous dash of soy sauce, the bay leaf, the cloves and thyme, add some pepper and let it simmer for half an hour.
Stir – when the gingerbread has completely dissolved – and check whether your sauce has the right thickness; if it is too thin you can add some gingerbread, if it is too thick add some wine and stock.
Add the cocoa powder and the hash spices. Let it simmer for another five minutes, remove the bay leaf and your stew is ready!
