You can make delicious cakes and desserts from meringue. If you eat vegan, meringue is unfortunately off limits, but there is an easy vegan variant that you can make.

1. Preheat the oven to 100 degrees.
2. Collect the liquid from the chickpeas in a bowl. Mix this for a few minutes with an electric mixer. Slowly add the sugar and vanilla extract. Keep mixing until the mixture is stiff. This can take about 10 minutes in total. You should be able to turn the bowl upside down without the mixture falling out.
3. Line a baking tray with baking paper and make swirls of the batter.
4. Place the meringue puffs in the oven for 1.5 hours at a temperature of 100 degrees. Then let them cool in the oven for 2 hours. In the meantime, do not open the oven.
