Caramel gives your cake or dessert that little bit extra. With this recipe you can make the caramel yourself.
Ingredients for the basic recipe

1. Place 100 g granulated sugar with 3 large tbsp water in a saucepan. The water prevents the sugar from burning quickly.
2. Set on low heat. Let the sugar melt for about three minutes until it starts to bubble. Wipe the edges with a damp brush to prevent the sugar from burning there. Do not stir further, otherwise the sugar will crystallize.
3. The sugar will discolour after five minutes. Now you can stir:with a whisk until the caramel turns light brown. Remove the pan from the heat immediately, otherwise the caramel will burn.
Crispy nut caramel
Pour the caramel over a baking tray lined with baking paper. Sprinkle chopped pecans, walnuts and almonds on top. You can also finely grind the cured caramel and use it as a garnish on a dessert.
Caramel sauce
Follow the basic recipe. After step three, stir in another 200 ml of whipped cream. Do you want it extra creamy? Then stir 100 g of butter through the cooled sauce.
Salted caramel
Add half a tsp coarse sea salt at the end. Also delicious with the hot chocolate. See more variations of hot chocolate.
