It's true that the annoying caramel has a tendency to cling to pans and baking moulds...
Fortunately, my grandmother told me her secret to making a homemade caramel that never sticks to the pan.
The trick to making a non-sticky caramel is to add a little lemon juice as soon as it starts to brown. Watch:

1. Put the sugar in a saucepan.
2. Add water.
3. Heat over low heat.
4. As soon as the caramel browns, add a squeeze of lemon juice.
There you go, you have made your homemade caramel without it sticking to the pan :-)
If you don't have a lemon on hand, you can replace the juice with a few drops of vinegar.
To make your homemade caramel a success every time, remember to respect the proportion of 5 sugar cubes for 1 teaspoon of water.
