Fortunately, there is a grandmother's trick to make sure your homemade caramel stays liquid.
To have a perfectly liquid caramel, the trick that works is to add a little lemon juice. Watch:

1. Heat 125 g caster sugar with 10 g water in a stainless steel saucepan, stirring vigorously to distribute the heat.
2. Remove the mixture from the heat as soon as you have obtained the desired colors (white for the icing, blonde for the citrus fruits and the meringues).
3. Add 70 g of lemon juice to the hot caramel, and it will remain liquid.
4. However, if its consistency turns a little solid, you just need to put it in the microwave for 30 seconds on the reheat position.
There you go, you made your own liquid caramel :-)
Good liquid caramel is still better!
