You might make fajitas with meat as standard, but a vegetarian version is just as easy and just as tasty.
Replace the meat with tofu, which is deliciously seasoned with Santa Maria's spice mix. Together with bell pepper, onion, lettuce and guacamole you have a tasty and nutritious meal.
For 4 people
1. Cut the tofu, bell pepper, onion and mango into cubes.
2. Fry the tofu in oil until golden brown.
3. Add the onion and bell pepper and cook over high heat for about 1 minute.
4. Lower the heat and add the seasoning mix and mango. Cook everything for 2 minutes. Add some water to the filling if necessary.
5. Heat the wraps as indicated on the package.
6. Place some lettuce on each wrap and then continue filling with the filling. Fold the wraps closed and add Chunky Wrap Salsa and guacamole as topping.
