Pesto sauce is a favorite recipe and so easy to make , finally if we read our technical sheet.
Ingredients for 4 people:
20 large fresh basil leaves (or already frozen)
4 cL of pine nuts
4 cloves of garlic
8 cL of olive oil
200 g parmesan
Salt and pepper
To obtain a very authentic basil pesto, the best technique is to use a pestle and a mortar. You can also use a blender if you want to save time.
Roast the pine nuts for about 1 minute. This first step, which consists of browning the pine nuts in a frying pan without any fat, allows the taste of these small seeds to develop.
Then cut basil and garlic cloves. Then overwrite them in the mortar with the pine nuts (or chop them in the blender) by adding olive oil as you go. Add the grated parmesan and mix all.
It's not more complicated and this inexpensive recipe has nothing to do with ready-made sauces from the supermarket. All you have to do is mix it with your pasta!
A cool technique to save money is to buy these ingredients in large quantities, which will cost you less.
Of course, you won't be able to eat it all at once, so we have a trick for freezing your basil pesto:Before adding the grated parmesan, freeze the mixture that you won't be using in ice cube trays.
So you will have plenty of frozen pesto cubes ready to use at any time and in the quantity of your choice. All you have to do is add the parmesan after defrosting.
