Custard is killer, but how do you get it right? You'll see that it's not that complicated, even quite easy, if you follow our recipe!
The hardest thing about custard is not eating it but rather making it right;-)? The preparation of the custard requires a good helping hand, but it is within everyone's reach. By following the instructions, you will see that it has never been so easy!
A good custard is:
--> 1 liter of milk
--> 6 egg yolks
--> 1 vanilla pod
--> 125g caster sugar
1) Pour the milk into a saucepan, split the vanilla pod lengthwise and scrape out the seeds to mix them with the milk. Also add the pieces of pod to the liquid to give even more flavor, and bring everything to a boil.
2) In a bowl, beat the egg yolks with the sugar (this is called "blanching" ), add the milk just removed from the heat and stir gently.
3) This dessert recipe, we finish it in a bain-marie to avoid misfires. Pour the preparation into a saucepan and place it on another saucepan filled with water. Put everything on low heat and stir constantly. When the cream is thick, creamy and it stays a little on the spatula, it's ready.
4) Remove the cream from the heat and let it cool stirring occasionally to keep it smooth and refrigerate.
The custard tastes very fresh. It is of course used in the floating islands, as an accompaniment to a chocolate fondant, or any other plain or flavored cake. You can also make a fruit soup with it, it's delicious!
A homemade custard, frankly, it has nothing to do with what is done in supermarkets.
It is true that this accompaniment for desserts will perhaps cost you 3-4€ more than the batches of industrial briquettes of 25cl. But you'll get much more and then all the same, it's worth the cost to treat yourself to this sweetness once or twice a year. We all have the right to have fun from time to time, don't you think?
