My Light and Cheap Sandwich Recipe for Lunch Break.

Sandwiches sold for lunch are often too greasy and too expensive. To eat better while spending less, here is a recipe for a light and economical "special lunch break" sandwich.

Today I offer you a smoked salmon sandwich with a cold cheese sauce, lemon, chives. Makes a fresh sandwich , tasty and a change from the traditional ham and cheese!

The Ingredients

4 slices of wholemeal bread

2 slices of smoked salmon

4 slices of tomato

2 washed lettuce leaves (batavia, lettuce...whatever you have)

50 g 0% fromage blanc

chives

1/4 lemon (green or yellow)

My Little Advice

Better make your sandwich in the morning, before leaving for work. If you make it the day before, the bread will absorb the cream cheese sauce which will make the sandwich spongy... Not great!

Preparation

1) Chop the chives and mix with fromage blanc in a bowl. Add a squeeze of lemon, very lightly salt, pepper and stir again.

2) Spread each slice of bread on one side with the preparation, add a lettuce leaf, a slice of salmon, 2 slices of tomato, cover with another piece of bread and cut the snack in half. For the second sandwich, repeat the same operation.

In 10 minutes your light lunch is ready. You just have to wrap it in aluminum foil to protect it from the outside and wait impatiently for the lunch break to taste it;).

If you're tired of fat dishes from the deli counter or ham and butter from the local bakery, this salmon sandwich is a good way to vary your lunch break dishes.

Savings Achieved

For less than €2 per snack against €5 to €6 minimum for a kebab, for example, it's starting to hurt a lot, especially if you eat there every lunchtime. Or €920 per year.

I'm thinking of putting them aside in a piggy bank every night when I get home and at the end of the year, I'll have a nice kitty to go on a trip.
