It's peak avocado season, enjoy tonight with our inexpensive surprise avocado recipe. An original and easy to make appetizer that should please everyone.
For 4 people you need:
--> 2 large ripe avocados
--> 2 tomatoes
--> 1 teaspoon of tarragon
--> 1 tablespoon of vinegar
--> 1 tablespoon of olive oil
--> 1 teaspoon of soy sauce (Kikoman)
--> the juice of a lemon
--> salt and pepper
1. Plunge the tomatoes for 30 seconds in a pan of boiling water to peel them more easily, then cut them into small cubes.
In a salad bowl, mix the vinegar, olive oil, Kikoman, tarragon, salt and pepper, add the tomatoes to the preparation and leave to stand for 1 hour so that they soak up the flavors of the marinade .
2. Cut the avocado in half lengthwise and scoop out the flesh with a spoon to save the shells for decoration. Blend the avocados or mash them with a fork with the lemon juice, salt and pepper.
3. Mix the avocado purée with the marinated tomatoes and put this preparation in the empty avocado shells.
This inexpensive and very easy to make evening recipe is ideal as a starter. To bring a touch of originality to this dish, I add 2-3 peeled prawns or slices of surimi when I have some on hand. Don't hesitate to use the rest of the marinade to decorate the plates.
The advantage of this recipe is that you can decline it in different ways. The surprise avocado can also make a great aperitif with friends.
By putting them in small verrines, you can easily treat 6-7 guests. At less than €2 per person, in other words, it's a very inexpensive starter compared to store-bought fresh cheese aperitifs and the €4-5 tapas trays that are often found with meals.
