This week, I'm bringing you a new easy, inexpensive recipe idea and what's more, very good:the tomato and goat cheese quiche. Discover it now!
For this easy recipe, the ingredients for 4 people are:
--> 1 shortcrust pastry
--> 4 eggs
--> 1 fresh goat cheese
--> 2 beautiful tomatoes
--> 20 cl of milk
--> salt and pepper
The preparation is very simple:
1. I preheat my oven to 220°C for 15 min (which corresponds to a thermostat 7).
2. The trick to make preheating the oven profitable is to cook the dough beforehand so that it is crispy. Don't forget to prick the dough with a fork. Instead of buttering the dish, I simply leave the parchment paper on while cooking, it's even easier to unmold.
3. Meanwhile, I peel and seed the tomatoes, before cutting them into thin slices. My little trick to make the skins of tomatoes come off easily is to immerse them in boiling water for 30 seconds. Then I let them cool in ice water so as not to burn my fingers when peeling.
4. In a bowl, whisk the eggs and add the milk, salt and pepper while continuing to beat. Then I add the goat cheese coarsely crumbled , the tomato slices and I mix everything gently.
5. I pour the preparation on the pre-baked pie crust and I slide the quiche in the oven for 30 minutes.
6. To check that my pie is well cooked, I prick it with a knife. If the knife blade stays clean when I remove it, it's ready!
You can serve this quiche well hot or warm. And accompany it with a green salad well seasoned, it's perfect for a light meal.
