Appreciated by all my friends, I am sharing with you today my economical and tasty recipe...
... that you can enjoy all spring and all summer long.
- 300 g of salmon steaks (€7)
- 1 box of 6 eggs (€1.25)
- 1 can of anchovies with capers (€2)
- 1 bag of salad of 200 g (1 €)
- 4 tomatoes (€1.50)
- 1 jar of pitted olives (€1.20)
- 1 kg of green beans (€1.90)
- 1 lemon (€0.30)
1. Start by boiling the green beans for 7 to 10 minutes in boiling water.
A silly trick :I cook the eggs in boiling water for the green beans. This avoids boiling water twice and therefore wasting water and electricity or gas. Take the eggs out after 4 minutes of cooking, to have them soft.
2. Once the green beans are cooked, run them under cold water. It allows to fix the beautiful green color and also to cool them.
3. Heat the pan, add a little olive oil. Place the salmon steaks skin side down for 3 minutes over medium heat. Then turn over and cook for 3 minutes. This makes the salmon very crispy around and very tender inside.
I chop the anchovies in a bowl. I add the juice of 1 lemon, 4 large tablespoons of olive oil and a pinch of mustard. I beat everything with a fork so as to obtain a kind of mayonnaise.
I arrange the cold vegetables on the plates with the tomatoes cut into quarters. I put the hot salmon on the vegetables and the soft-boiled eggs cut in 2.
I sprinkle with anchovy sauce and pepper (no need to salt, the anchovies are already enough).
