At home, we are very fond of good desserts without fuss but very greedy.
And there is one that my husband and my children particularly like:the flan tart.
So the purists will tell me that this is not the exact recipe for the "real Parisian flan"... It's true.
But this delicious flan tart is always a huge hit. I've been making it for years and I get asked for the recipe every time.
And in addition, it is very easy to make and economical,
The little secret is the wholemeal flour mixed with almond powder which gives a delicious roasted taste to the pie.
And of course, don't forget to lightly caramelize it on top for maximum pleasure :-) Yum!
Here is the very gourmet recipe for homemade flan pie :

Preparation time: 25 mins
For the dough:
- 220 g wholemeal flour
- 30 g almond powder
- 3 tablespoons cane sugar
- 1/2 teaspoon of salt
- 125 g of butter
- 1 whole egg
For the flan:
- 1/2 l whole milk
- 2 whole eggs + 2 egg yolks
- 80 g cane sugar
- 90 g cornflour
- 1 teaspoon of natural vanilla extract
For the finish:
- 2 tablespoons cane sugar
- 1 knob of butter
1. In a bowl, mix all the "dry products" of the dough:flour, almond powder, salt and sugar.
2. Add the fresh butter cut into pieces.
3. Crumble it with your fingertips so as to form a kind of "sand", with the flour.
4. Add the whole egg.
5. Work the dough by hand until it forms a uniform ball. Add a little flour if it sticks too much to your fingers.
6. Wrap the ball of dough in cling film and let it rest in the fridge for 30 min.
7. Take the dough out of the fridge and roll it out into a thin layer using a floured rolling pin.
8. Put it in a tart mold about 25 cm in diameter that you have lightly buttered beforehand.
9. Preheat your fan-assisted oven to 180°C.
10. In another bowl, beat with a whisk the 2 whole eggs, the 2 egg yolks and the cane sugar. Blanch them well.
11. Add the vanilla extract and mix.
12. Still in the same bowl, add the cornstarch little by little, stirring briskly to avoid lumps.
13. Then slowly pour in the cold milk and mix.
14. Then put this preparation in a saucepan.
15. Heat over low heat and stir constantly with a whisk. The flan dough will thus gradually thicken. Be careful that this does not catch the bottom of the pan.
16. Once the consistency has thickened, pour the still hot preparation into the pie dish.
17. Bake the flan tart for at least 30 minutes depending on the power of your oven.
18 . Shortly before the end of cooking, spread the knob of butter on top of the pie and sprinkle 2 tablespoons of cane sugar.
19. Leave to caramelize slightly for 2 minutes under the oven grill. Watch the cooking carefully so that the flan does not burn!
20. Take the flan tart out of the oven and let it cool on a wire rack.
And There you go ! You made a great homemade flan pie in no time :-)
Very easy, cheap and delicious, this recipe smells good of our childhood memories, doesn't it?!
Believe me, you will make people happy at snack time!
When it comes out of the oven, the pastry must be golden brown to be crispy, especially the bottom of the pie.
The flan should be "trembling" (it will solidify even more as it cools) and form a thin caramelized film on top.
- I prefer to eat this pie lukewarm. But it is also very good after leaving it in the fridge for an hour.
- You can replace the vanilla extract with a packet of vanilla sugar. Even better, infuse a split vanilla pod in the slightly heated milk in a saucepan for 10 minutes.
- For adult enthusiasts, 1/2 tablespoon of rum in the flan brings a delicious aroma.
