Simply mince the chicken fillets and place them in a glass gratin dish, then spread 15 to 30 g of pesto on each chicken fillet.
Next, cut 1 to 2 tomatoes into slices and place them on the pesto. We then sprinkle grated mozzarella or parmesan cheese on top.
All that remains is to cook in the oven at 200°C for 30-40 min or until the chicken is cooked through and the juices run clear.
While the chicken is cooking, I prepare a casserole of rice or pasta. Simply serve the chicken fillets over rice or pasta.
With the cooked tomatoes on the chicken, that's quite a bit of vegetables for the meal. So no need to do it again;-)
But if you want to eat more vegetables, you can add a small salad or some steamed broccoli.

2. Place them in a single layer in a glass casserole dish.
3. Spread 15 to 30 g of ready-made pesto on each fillet.
4. Cut the tomatoes into slices about 1 cm thick.
5. Place two slices of tomato on each chicken breast.
6. Grate the mozzarella or parmesan.
7. Spread the grated cheese evenly over the top of the dish.
8. Bake at 200°C for 30 to 40 minutes, or until the chicken is cooked through and the juices run clear.
9. Serve over a bed of rice or a plate of pasta.
