For 4 people
- 1 shortcrust pastry
- 2 organic lemons
- 40g cornstarch
- 500 g of white cheese beaten at 0% fat
- 150 g of 0% fat heavy cream
- 7 tablespoons of special baking sweetener
- 80 g of skimmed milk
- 4 eggs
1. Preheat the oven to 180°C.
2. Unroll the dough.
3. Put it in a pie pan with the baking film.
4. Pre-cook it for 10 minutes, watching.
5. After 10 minutes, take the dough out of the oven.
6. In the meantime, rinse the two lemons.
7. Squeeze a lemon.
8. Take its zest by grating it.
9. Cut the second lemon into thin slices and set aside.
10. In a bowl, pour 40 g of cornstarch.
11. Crack the eggs and separate the whites from the yolks using this trick.
12. Mix the egg yolks with the cornflour.
13. Add the seven tablespoons of sweetener.
14. Mix until you get a smooth paste.
15. Slowly add the milk, while continuing to mix.
16. Add the fresh cream and fromage blanc.
17. Pour in the lemon juice and lemon zest.
18 . Stir.
19 . Whisk the egg whites with this trick.
20. Gently fold them into the batter.
21. Pour the batter over the pie shell.
22. Decorate with lemon slices.
23. Bake for about 35 min.
