Ingredients

Preparation time: 10 min - Total time: 25 mins

- 12 large hard-boiled eggs

- 100g mayonnaise

- 1.5 tablespoons of Dijon mustard

- 1/4 tbsp garlic powder

- a big pinch of salt (more or less according to taste)

- a small carrot, peeled and cut into thin rounds

- 6 pitted black olives

- a very sharp knife

- a straw

- a pastry nozzle

How to

1. Remove the shell from the 12 hard-boiled eggs.

2. With a sharp knife, cut a very thin layer at the base of the egg. This will provide a flat surface for the egg to stand upright on the plate.

3. Cut the top of the eggs to about two-thirds.

4. Gently squeeze the base of the egg to separate the yolk from the white. Press the yolks out gently. They should come off easily. Keep the lids with their bases.

5. In a medium-sized bowl, mix the 12 egg yolks and crush them.

6. Add mayonnaise, mustard, garlic and salt.

7. Mix everything until smooth.

8. Transfer the mixture to the pastry nozzle.

9. Place the tip of the nozzle into the egg white, gently press it down and fill in the egg white.

10. Put the lid back on the base and press lightly so that it adheres to the base.

11. To make the eyes, press the straw on the olive so that it pierces it. Then gently squeeze the straw. The little pieces of olive will come out right away. Repeat the operation several times.

12. To make the beaks, cut the carrot into thin rounds then cut each round into six parts.

13. Put two small pieces of olives to make the eyes and two pieces of carrot to make the beak.

14. Place the chicks on a platter and garnish with fresh parsley or dill to make it look like they are in the grass.

Additional tips

- You don't have Dijon mustard? Not serious ! Replace it with 1.5 tablespoons of white vinegar.

- If you have trouble peeling the eggs, try doing it under running tap water. Very fresh eggs do not peel easily. So I always prepare a few more hard-boiled eggs so I don't run out if there's a problem.

- You can also put baking soda in the cooking water so that the shell comes off easily. Check out the trick here.
