Lasagna isn't always made with bolognese sauce.
There are delicious variants, especially with vegetables, which are less expensive.
How about tomato and zucchini lasagna?
Accompany them with ham or salmon, if you wish, for a complete dish.
- 1 pack of lasagna sheets
- 4 courgettes
- 6 tomatoes
- 2 stalks of celery
- 3 onions
- 400g tomato sauce (canned)
- 400 g of ricotta
- 100 g grated Gruyère
- 90 g parmesan
- 50 cl bechamel
- 5 sprigs of thyme
- Salt and pepper
- Option:50 g of pine nuts
1. Preheat the oven to th. 6 (180°).
2. Wash, cut your courgettes into slices.
3. Scald and peel your tomatoes.
4. Cut 3 tomatoes into rings and 3 into cubes.
5. Trim the celery, dice it.
6. Peel and chop the onions.
7. In a skillet, sweat the onions and celery with 2 tablespoons of olive oil.
8. Add the diced tomatoes, tomato sauce, thyme.
9. Season with salt and pepper and cook for 5 minutes.
10. In a bowl, combine the ricotta, parmesan and, if desired, pine nuts.
11. In a dish, arrange plates of lasagne then a layer of ricotta mixture.
12. Then place a layer of zucchini and then sliced tomatoes.
13. Then put the béchamel, then the tomato preparation.
14. Continue like this to the top.
15. Finish with a layer of lasagna sheets covered with béchamel and Gruyère cheese.
16. Bake for about 50 minutes and serve hot.
There you go, your tomato and zucchini lasagna is ready to be enjoyed :-)
