- 100 g of flour
- 2 eggs
- 70 ml of oil
- 90 ml of milk
- 70 g of grated cheese
- 2 tbsp. c. yeast
- 1 large potato
- 1 large zucchini
- salt, pepper
- optional:nutmeg
1. Preheat your oven to 180° (th.6).
2. Peel and cut the potato into small cubes.
3. Peel and cut the zucchini into fairly thin strips.
4. In a skillet, brown the zucchini with a little olive oil.
5. Salt, pepper, cook for another 5 minutes.
6. Drain on absorbent paper and let cool.
7. Brown the potato cubes in the pan.
8. In a container, mix eggs, flour, yeast then add the lukewarm milk, oil and cheese little by little.
9. Add your vegetables and mix everything.
10. Add a little nutmeg if you wish.
11. Pour the mixture into a lightly buttered cake tin.
12. Bake for about 40 minutes.
There you go, your potato and zucchini cake is ready :-)
Easy, delicious and economical!
