This is an easy to make summer grandmother's recipe, light and quite quick to make.
Discover this economical family recipe... and above all very good. Watch:
- 6 beautiful tomatoes
- 200g of beef
- 150 g of sausage meat
- 3 carrots
- 2 or 3 pieces of bread
- a little milk
- 1 egg
- 1 onion
- 1 shallot
- Provence herbs
- olive oil
- salt and pepper
1. Fry your onions and shallots, as well as your diced carrots in a drizzle of olive oil.
2. Then add the meat and simmer.
3. Meanwhile, core the tomatoes and add the flesh to the pan.
4. Salt, pepper and sprinkle with Provencal herbs.
5. Leave to brown for about 20 minutes.
6. Then put it all in the blender.
7. Dip the bread in the milk until all the liquid is absorbed.
8. Add this mixture to the stuffing.
9. Mix then add the whole egg. Blend again.
10. Fill each tomato with this preparation.
11. Close with the hat and bake for about 45 minutes in a hot oven, with a little water in the dish.
There you go, your old-fashioned stuffed tomatoes are already ready :-)
Serve with rice to make it a complete dish and appreciated by young and old.
These stuffed tomatoes are a dish that can be eaten both for lunch and dinner.
You can even prepare them in advance to enjoy them on a weeknight.
They reheat very well and remain as tasty as ever.
The trick to reducing your grocery bill can be to decorate your stuffing with multiple vegetables (diced peppers, zucchini or carrots).
This allows you to increase the volume of stuffing without forcing the meat. You can even make it a 100% vegetarian version with only vegetables and rice.
The plates will thus be fuller, for a lower sum!
I also use all the leftover meat that I removed from my previous recipes and then frozen in order to reuse them to make my stuffing.
You can use all kinds of meat. For example beef, pork or sausage meat... or even ground chicken for a light version.

- 400 g of beef:€13.50 per kilo, i.e. €5.40
- 300 g of sausage meat:€7.33 per kilo, i.e. €2.20
- 1 onion:around 125 g at €1.85 per kilo, i.e. €0.23
- 4 teaspoons of Provencal herbs:20 g at €21.10 per kilo, i.e. €0.42
That's a bill of €1.75 for 1 tomato or €10.50 for 6 stuffed tomatoes.
