Here I share with you my easy and healthy recipe for extra fluffy pancakes.
"Fluffy" as the Americans say!
Ready in a few minutes and without rest, they are perfect for a good brunch.
Or for a sweet craving for a snack with the children.
This traditional American express recipe will delight you with its simplicity.
All you have to do is adapt them according to your tastes and enjoy them.
Here is my delicious inescapable recipe for extra soft pancakes ready in 10 min . Watch:

- 150 g all-purpose flour
- 2 tablespoons of sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 250 ml of milk
- 2 tablespoons unsalted and melted butter
- 1 large egg
- 2 salad bowls
- whip
- large pan (non-stick or cast iron)
- spatula
- a little oil to grease the pan
- absorbent paper
- a plate that goes in the oven
Preparation: 8 mins - Cooking: 1 min - For 4 people
1. Preheat the oven to 100 degrees to keep the pancakes warm.
2. In the bowl, mix the flour, sugar, yeast and salt with a whisk. Set aside.
3. In the other bowl, whisk together the milk, butter and egg.
4. Add the contents of the first bowl to the other, whisking gently just to avoid lumps.
Note: the mixture does not need to be smooth like a pancake batter so no need for Thermomix.
5. Heat the skillet over medium heat.
6. Grease the bottom with a little oil by passing an absorbent paper soaked in oil.
7. Drop 2 to 3 tablespoons of batter into the pan and form a nice circle with the back of the spoon.
8. Cook for two minutes until the surface turns brown.
9. Carefully flip the pancake with the thin spatula to cook the other side for a minute and a half.
10. Slide the pancake onto the plate and put in the oven to keep warm.
12. Repeat the operation until the bowl of dough is empty.
And There you go ! Your thick and extra fluffy American-style pancakes are already ready :-)
Easy, quick and delicious, right?
All that remains is to taste them and enjoy!
Accompany your pancakes with homemade Nutella, fresh fruit, maple syrup, redcurrant jelly, compote, banana...
And for the greediest, a banana ice cream or a good homemade whipped cream.
Do you prefer salty?
Remove the sugar from the recipe, these pancakes can also be enjoyed savory with a sausage or melted butter.
For a lighter version, replace the milk with low-fat yogurt or low-fat buttermilk.
For pancakes without eggs, simply remove them from the recipe.
